Grab some bananas and oatmeal and let's make some bread!

And I'm not ashamed to admit my fondness. But... I must admit, my health and fitness journey has shown a need for a change from the white floured type. Then, Voila! I heard of the likes of Banana Oat Grace Bread from my WW crew. This bread incorporates protein from Greek yogurt and fiber from the oats! I get the best of both worlds! I can't take credit for this recipe, as it has been passed around and shared among many WW members. (Although I added the touches of maple extract :) Hope you like it as much as I do! Bon Appetit!
Healthy Banana Oat Grace Bread
WHAT YOU NEED:
3 medium bananas (ripe)
3¾ cups uncooked oatmeal
2 cups Fage Total 0% nonfat Greek Yogart
5 teaspoons Monkfruit sweetener or Stevia or sweetener of choice
2 teaspoons baking soda
1 large egg, room temperature
1 teaspoon pure vanilla extract
1 teaspoon maple extract
1 splash butter extract
1 teaspoon cinnamon
Cooking spray (I like butter flavored)
Optional Add-In Items: chocolate chips or chunks, chopped walnuts, raisins... whatever fits your tastebuds!
WHAT TO DO:
Preheat your oven to 350°F.
Grease a 9x5 baking pan with cooking spray.
In a large mixing bowl, mash ripe bananas (I usually use a fork for this) and then add in monkfruit sweetener, stevia, or sweetener of your choice, baking soda, vanilla, maple and butter extracts, cinnamon, and beaten egg. Mix well.
Add Greek yogurt to the mixture and whisk together. (I'm partial to Fage' but by all means, select the Greek yogurt of your choosing.)
Stir in uncooked oatmeal, adding a cup at a time. At this time, you may add in those optional items like chopped nuts, chocolate chips, or even dried fruits. Mix all ingredients together well.
Bake for 40 to 45 minutes. Check the bread by testing it for firmness, and by inserting the tip of a butter knife into the center. The bread should not be wet in the center. Once the baking is complete, remove the Banana Grace Bread from the oven and allow to set about 10 minutes before slicing. Serve warm or cooled. It can be used as a breakfast bread or as a dessert (with a little I Can't Believe It's Not Butter Spray, ice cream, and a little sugar free caramel). Either way, it's really delicious, especially with a nice cup of java! Wrap and store in the refrigerator. Enjoy!
